Hearty and Healthy Quadra Island Granola

This healthy and wholesome homemade granola recipe is made with coconut oil, honey, tons of nuts and fruit. It’s a variation of a recipe from Daniel’s Aunty Barb who is always cooking up super healthy and heavenly food from her wonderful garden up on Quadra Island.

The granola is delicious to have in the morning with some yogurt or almond milk, or simply carry it around by itself for a great snack in the afternoon. It is easy to make, delicious and filled with wholesome healthy ingredients.

Ingredients:

We usually make twice this amount, but I decided to write the recipe in half since not everyone will go through it as quickly.

3 cups large flake oats
¾ cups pumpkin seeds
¾ cups almond slivers
¾ cups cashews
½ cup sunflower seeds
1 cup unsweetened shredded coconut
½ tsp. cinnamon

1 cup coconut oil
1 cup honey
1 tsp. vanilla extract

½ cup golden raisins
½ cup dried cranberries

Instructions:

  1. Preheat the oven to 275 degrees.
  2. In large mixing bowl combine the oats, nuts and coconut flakes.
  3. In a small saucepan heat the coconut oil, honey and vanilla extract until warm, then pour over the dry ingredients and mix well.
  4. Spread the mixture evenly over a baking sheet and bake for 1 hour, stirring every 15 minutes, until you achieve a nice even colour.
  5. Remove from the oven and place in a large bowl Add the dried fruit and mix, stir occasionally while cooling. Store in an airtight container for a few weeks.

    Thank you Lucy for liking my home made gronala enough to comment on it on your new web site. I add 1/4 cup of local honey and 1/4 cup of Molasses as molasses is all so very healthy for you.

      Thanks Barb! I’ve been playing around with it, it’s so tasty and does the trick keeping Daniel filled up. My dad is looking to make a granola for our bakery so I’ll tell him you add molasses as well.
